  • 1 onion, diced



  • 10 cloves garlic, minced



  • 1 large sweet potato, peeled and diced**

  • 1 cup water

Instructions 

  • Turn your Instant Pot to “Saute” and add the olive oil.
  • Add in your diced sweet potato (see notes for chunk preference), onion, and minced garlic.
  • Saute for 7 – 10 minutes, stirring occasionally to prevent burning, until the sweet potato begins to soften. For sweet potatoes that stay in chunks, cook for less time. If you prefer them to break down and become part of the sauce, cook longer.
  • Once the vegetables have softened, turn your Instant Pot to “OFF” to stop the heating process.
  • Add the penne pasta, ground sage, thyme, vegetable broth, and water to the pot.
  • Stir well, ensuring all the penne pasta is fully submerged in the liquid to ensure even cooking.
  • Seal the Instant Pot lid, set the valve to “Sealing,” and turn to “Manual” or “Pressure Cook,” setting the timer for 5 minutes.
  • Once the Instant Pot reaches pressure (this usually takes a few minutes), it will begin the 5-minute countdown.
  • When the 5 minutes are up, perform a quick release of the pressure by carefully turning the steam release valve to the “Venting” position.
  • After the float valve has dropped, indicating all pressure has been released, safely remove the lid.
  • Stir in the heavy cream and freshly grated Parmesan cheese until well combined and the cheese has melted.
