I might be a bit late to the bandwagon, but scrambled tofu has quickly become one of my absolute favorite ingredients.
While I firmly believe that vegetarians have plenty of options to get sufficient protein, I’m always looking for easy and delicious ways to boost protein intake.
That’s where scrambled tofu truly shines!

My love affair with scrambled tofu began when I first experimented with making
tofu taco meat.

Firstly, there’s no need to spend time pressing it, which is often a lengthy and tedious step when preparing tofu.
For this recipe, simply draining it and patting it dry is enough.
Secondly, its neutral taste and porous texture mean it’s incredibly adept at absorbing any flavor you throw its way.
This makes it a chameleon in the kitchen, allowing you to transform it into anything from savory taco meat to a delicious, protein-packed addition to casseroles.

When I first introduced this Tofu Mexican Rice Casserole to my family, I decided to keep the “secret ingredient” to myself.

As is my custom, I believe in piling on the fresh vegetables to enhance both flavor and nutrition.
In this particular casserole, we’re featuring an abundance of wholesome ingredients:
generous amounts of fresh garlic, which not only tastes fantastic but is also packed with health benefits;
sweet and savory onions; earthy mushrooms; and crisp, vibrant red bell pepper.
These vegetables add layers of texture and essential nutrients, making every bite a delightful experience.

Tofu Mexican Rice Casserole

Ingredients 

  • 8 oz mushrooms, sliced
  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 12 cloves garlic, minced
  • 14 oz extra firm tofu, drained
  • 3 tablespoons olive oil, divided
  • 5 cups cooked white rice
  • 16 oz enchilada sauce
  • 2 small limes, juiced
  • 1/4 cup cilantro, chopped
  • 3 tablespoons cumin
  • 1 tablespoon chili powder
  • 1 teaspoon pepper
  • 1 1/2 teaspoons sea salt
  • 2/3 cup shredded Mexican cheese , for filling
  • 1/2 cup shredded Mexican cheese, for topping

Instructions 

  • Cook rice according to instructions. You will need 5 cups of cooked rice (I used a rice cooker)
  • Add mushrooms, bell pepper, onion, garlic, and 1 tablespoon of olive oil to a large skillet
  • Saute on medium high heat for 10 – 15 minutes, or until mushrooms cook down 
  • After you get the veggies started, drain tofu and pat dry with a paper towel
  • Heat a large skillet over medium high with 2 tablespoons of olive oil
  • Add the block of tofu and use a potato masher to scramble into egg like texture (see picture in the post)
  • Cook tofu for around 10 minutes, using a spatula to press down and scramble until it starts to dry out and get browned
  • Once veggies have cooked, add the tofu, enchilada sauce, cooked rice, lime juice, cilantro, cumin, chili powder, pepper, salt, and 2/3 cup of shredded mexican cheese
  • Stir well to combine and taste/adjust seasonings if desired
  • Transfer mixture to a casserole dish and spread out evenly
  • Sprinkle on remaining 1/2 cup of mexican cheese on top
  • Bake at 400 degrees for 15 minutes, or until cheese is bubbly and edges begin to brown
  • Serve garnished with additional cilantro, sour cream, and tortilla chips
