Ingredients 

  • 1/3 cup ginger, finely diced
  • 1/4 cup garlic, minced
  • 1 1/2 cups diced carrot
  • 14 ounce extra firm tofu
  • 10 ounce frozen peas
  • 24 oz frozen riced cauliflower
  • 6 tablespoons gluten free tamari/soy sauce, or to taste
  • 4 tablespoons sesame oil, divided
  • salt

Instructions 

  • Drain the tofu and pat dry with a towel to remove excess moisture.
  • Heat 2 tablespoons of sesame oil in a large skillet or wok over medium-high heat.
  • Add the drained tofu to the skillet and use a potato masher or fork to “scramble” it until it resembles small crumbles, similar to scrambled eggs.
  • Cook the tofu, stirring and flipping with a spatula, for 10-15 minutes, or until it is nicely browned and starting to dry out. Remove from skillet and set aside.
  • While the tofu is cooking (or in a separate large skillet), heat the remaining 2 tablespoons of sesame oil over medium-high heat.
  • Add the minced garlic, finely diced ginger, and diced carrots. Sauté for approximately 10 minutes, stirring frequently, until the carrots are tender-crisp but no longer crunchy.
  • Add the frozen peas and frozen riced cauliflower to the skillet. Stir and cook for another 10-15 minutes, until the cauliflower is completely defrosted and heated through.
  • Return the cooked tofu to the skillet with the vegetables. Add 1 teaspoon of salt and the gluten-free tamari/soy sauce. Stir everything together thoroughly. I recommend starting with 4-5 tablespoons of tamari and adding more to taste. (I used 6 tablespoons for a robust flavor.)
  • Taste the fried rice and adjust seasonings (salt, tamari) if necessary to achieve your desired flavor. Serve hot and enjoy!
