  • In a large mixing bowl, combine the natural creamy almond butter, pure maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon. Use a rubber spatula or sturdy spoon to thoroughly mix the ingredients together until a thick, uniform batter forms. Ensure all ingredients are well incorporated.
  • Line a baking sheet with wax paper or parchment paper. Using a 1.5 tablespoon-sized mini cookie scoop, portion out the batter and drop balls onto the prepared baking sheet, leaving a little space between each.
  • Roll each ball gently between your palms to smooth out any rough edges and achieve a perfectly round shape.
  • In a separate microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in short 10-15 second bursts, stirring well after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat or burn the chocolate.
  • Using a spoon or fork, generously drizzle the melted white chocolate glaze over the tops of the energy bites, allowing it to naturally cascade down the sides, just like a cinnamon roll frosting.
  • Place the baking sheet with the drizzled energy bites into the refrigerator for at least 1 hour, or until the bites and their glaze are firm and hardened.
  • Once set, transfer the cinnamon roll energy bites to an airtight container. Store them in the refrigerator for daily snacking or in the freezer for longer preservation.

Almond Butter Selection

Natural Almond Butter: For the best consistency and flavor, it is crucial to use natural almond butter that does not contain added sweeteners or hydrogenated oils. The only ingredients on the label should ideally be almonds, a natural oil (like palm or sunflower oil to prevent separation), and salt. This ensures the correct texture for the energy bites.

Adjusting Salt Content

If your almond butter does not contain added salt: Use the full 1 teaspoon of salt as listed in the recipe. This will properly balance the sweetness and enhance the overall flavor.

If your almond butter already has salt in the ingredients: Reduce the added salt significantly. Only add about ¼ teaspoon of salt to the batter, or even less, and then taste the mixture before adding more. You can always add a pinch more if needed, but you can’t take it out!
