Ingredients 

  • 10 oz sturdy tortilla chips
  • 15 oz can of black beans, drained and rinsed
  • 1 batch 5 minute nacho cheese sauce
  • 1/2 green bell pepper, diced

For Topping:

  • sliced cherry tomatoes
  • sliced green onion
  • diced avocado
  • chopped cilantro
  • tamed pickled jalapenos
  • fresh lime juice

Instructions 

  • Preheat your oven to 400 degrees F (200 degrees C). Line a large cookie sheet with parchment paper for easy cleanup.
  • Spread out sturdy tortilla chips into an even, single layer on the prepared cookie sheet.
  • Drain and rinse the can of black beans thoroughly, then gently blot off any excess water with a paper towel.
  • Distribute the prepared black beans evenly over the top of the tortilla chips.
  • Sprinkle the diced green bell pepper evenly over the beans and chips.
  • Bake in the preheated oven for 3 – 5 minutes, just until the beans and peppers are warmed through and the chips are slightly crisped, but not burnt. Watch carefully!
  • While the nachos are in the oven, quickly prepare your delicious 5-minute nacho cheese sauce according to its recipe.
  • Carefully remove the sheet pan of warmed nachos from the oven.
  • Generously drizzle the warm nachos with the homemade nacho cheese sauce.
  • Top the nachos with your desired fresh optional toppings: sliced cherry tomatoes, sliced green onion, diced creamy avocado, chopped fresh cilantro, and tamed pickled jalapenos.
