Essential Ingredients for Your Vegan Breakfast Burritos

Crafting these delectable vegan breakfast burritos requires a few key components, each playing a vital role in creating their signature taste and texture. Here’s a breakdown of what you’ll need:

  • Sweet Potato: Adds a touch of natural sweetness and vibrant color to the hash.
  • Russet Potatoes: The backbone of our crispy hash, providing a classic potato flavor and satisfying texture.
  • Onion and Garlic: Aromatic staples that infuse the hash and tofu scramble with essential savory depth.
  • Extra Firm Tofu: The star of our “scrambled egg” alternative, chosen for its ability to hold shape and absorb flavors beautifully.
  • Enchilada Sauce: Forms the base of our unique, creamy cashew sauce, offering a rich and tangy foundation.
  • Roasted Cashews: The secret ingredient for creaminess and a subtle nutty richness in the “cheesy” sauce. Roasted cashews blend exceptionally smoothly.
  • Salsa: We recommend a medium spicy chunky salsa to add a zesty kick and additional moisture to the cashew sauce.
  • Nutritional Yeast: Essential for imparting that distinct savory, umami, and “cheesy” flavor to the tofu scramble.
  • Fresh Lime: A squeeze of fresh lime juice brightens all the flavors and adds a tangy finish.
  • Spices & Olive Oil: Your preferred blend of seasonings and olive oil for roasting the hash and sautéing the tofu.
  • Tortillas: Large flour tortillas are ideal for wrapping, or opt for gluten-free tortillas for a dietary-friendly version.
  • Chopped Cilantro: A vibrant garnish that adds a burst of fresh, herbaceous flavor.

The beauty of this burrito lies in its two perfectly balanced components: the rich, savory tofu scramble and the delightfully crispy vegan breakfast hash. The homemade cashew-based sauce for the tofu is so incredibly creamy and flavorful that it truly stands on its own, eliminating the need for extra condiments. While you’re welcome to dip your burrito in additional salsa if you desire, you might find it completely unnecessary. Even my husband, who habitually adds sour cream or salsa to almost everything, enjoyed these vegan burritos exactly as they were!

How to Make These Incredible Vegan Breakfast Burritos

Creating these sensational vegan breakfast burritos is a straightforward process, broken down into a few simple steps. The key is to manage your time efficiently, starting with the component that takes the longest to cook.

Step-by-Step Instructions:

Step 1: Prepare Your Crispy Potato Hash. This is the most time-consuming component, so it’s best to get it started first. Begin by uniformly chopping your russet potatoes and sweet potato into small, bite-sized cubes. Consistency in size ensures even cooking. Toss them generously with olive oil and your favorite breakfast spices (such as paprika, garlic powder, onion powder, salt, and pepper). Spread them out in a single layer on a baking sheet and roast them in the oven at 450 degrees Fahrenheit (230°C). This high heat is crucial for achieving that coveted crispy exterior. Let them roast until golden brown and tender on the inside, flipping once halfway through.

Step 2: Craft the “Cheesy” Cashew Sauce. While your potatoes are roasting, you can prepare the incredible sauce for the tofu. This sauce is what elevates the tofu scramble from good to gourmet! In your high-speed blender, combine the enchilada sauce, roasted cashews, your chosen medium spicy salsa, and nutritional yeast. Blend everything until it’s exceptionally smooth and creamy. The high-speed blender is key here for a truly velvety texture.

Joy’s Tip for the Perfect Sauce

I find that a high-speed blender yields the absolute smoothest and most luxurious sauce. However, in a pinch, a food processor can also work. Just strive to get it as smooth as possible to achieve that desirable creamy consistency.

Do You Need to Soak the Cashews First?

Great news: no, you don’t! Since we’re using roasted cashews (as opposed to raw), they are softer and will blend smoothly without the need for pre-soaking. Raw cashews, on the other hand, typically require soaking to achieve a creamy consistency. This sauce truly tastes like a gourmet vegan queso dip, and it’s so versatile. I even use a similar sauce in my vegan quesadillas, and it’s always a huge hit!

Step 3: Prepare the “Cheesy” Tofu Scramble. First, drain your extra-firm tofu and press out as much excess water as possible. This is a crucial step for achieving the right texture and allowing the tofu to absorb the sauce effectively. Crumble the pressed tofu into a large skillet using a potato masher or your hands, aiming for an “egg-like” scrambled texture. Heat the skillet to medium-high, then add the creamy cashew sauce from your blender, along with the fresh lime juice and a pinch of salt. Cook the tofu, stirring occasionally, for about 10-15 minutes. The goal is for the tofu to absorb much of the sauce, becoming less soft and developing a texture similar to a thick, savory dip. It should still be moist but not mushy.

Step 4: Finish the Hash with Aromatics. While the tofu is cooking, prepare the garlic and onion mixture for the hash. In a separate small pan, sauté the chopped onion and minced garlic until fragrant and softened. Once your roasted potatoes are done in the oven, remove them and add the sautéed onion and garlic mixture. Toss everything together thoroughly to combine the flavors.

Once both your aromatic hash and the savory tofu scramble are ready, chop some fresh cilantro. You’re now perfectly set to begin assembling your incredible breakfast burritos!

Assembling Your Burritos: To make them easier to roll, lightly warm your tortillas in the microwave for a few seconds first. On each warmed tortilla, place a generous scoop of the “cheesy” tofu scramble. Follow this with a sprinkle of fresh, chopped cilantro for a bright herbal note. Finally, add a substantial scoop of the irresistibly crispy potato hash. Carefully but firmly roll up each burrito, tucking in the sides as you go, to create a neat, handheld package. And just like that, they’re ready to devour!

For me, a truly satisfying meal needs a variety of textures, and this recipe delivers beautifully. The soft, creamy texture of the tofu scramble is perfectly balanced by the delightful crunch and chewiness of the roasted potatoes. These contrasting textures work in harmony, creating an incredibly satisfying and perfectly balanced bite every single time!

How to Store and Reheat Your Freezer-Friendly Burritos

One of the biggest advantages of these vegan breakfast burritos is how perfectly they lend themselves to meal prepping and freezing. Here’s how to store them for optimal freshness and reheat them for a delicious meal anytime:

Storage Instructions:

To freeze, individually wrap each prepared burrito tightly in aluminum foil. This prevents freezer burn and keeps them fresh. Once wrapped, place the foil-wrapped burritos into a large, airtight freezer-safe Ziploc bag. A gallon-sized bag typically accommodates about 4-5 burritos, depending on their size. Label the bag with the date, and they’ll keep well in the freezer for up to 3 months.

Reheating Instructions:

For a quick reheat, remove a burrito from the freezer and unwrap it from the foil. Place it on a microwave-safe plate. Microwave on high for approximately 1 minute, then flip it over and microwave for another minute. For thorough heating and to ensure the center is piping hot, cut the burrito in half and microwave for an additional minute. Total microwave time will be around 2-3 minutes, depending on your microwave’s wattage.

Alternatively, you can reheat them in an oven or air fryer for an even crispier result. Preheat your oven to 375°F (190°C) or air fryer to 350°F (175°C). Wrap the frozen burrito (still in foil, or without foil if using an air fryer and you want crispiness) and heat for 20-30 minutes, or until heated through. For extra crispness in the oven, remove the foil for the last 5-10 minutes.

What truly sets these burritos apart is that their incredible flavor and texture are maintained, or even improved, when reheated from frozen. It’s rare to find a meal prep item that tastes just as fresh and delicious days or even weeks later!

Seriously, these are quite possibly the best breakfast burritos—vegan or otherwise—I have ever had the pleasure of tasting! They are a must-try for anyone looking for a hearty, flavorful, and convenient breakfast solution.

Ingredients

  • 14 oz extra firm tofu
  • 8 oz enchilada sauce
  • 1 cup roasted salted cashews
  • 1/2 cup medium spicy chunky salsa
  • 1/4 cup nutritional yeast
  • 1 lime, juiced
  • 1/2 teaspoon salt
  • 10 tortillas
  • chopped cilantro, for topping

For the hash

  • 1 batch Simple Vegan Breakfast Hash

Instructions

  • Make one batch of the vegan breakfast hash according to the instructions (chop russet and sweet potatoes, toss with olive oil and spices, roast at 450°F / 230°C until crispy). This will take the longest to cook, so you can work on the rest of the recipe while this is in the oven.
  • In a high-speed blender, blend together the enchilada sauce, roasted cashews, salsa, and nutritional yeast until completely smooth and creamy.
  • Drain the extra firm tofu thoroughly and pat it dry with paper towels to remove excess moisture.
  • Add the pressed tofu to a large skillet and use a potato masher or fork to scramble it until it resembles an egg-like texture.
  • Heat the tofu to medium-high heat and add the creamy sauce from the blender along with the fresh lime juice and salt.
  • Cook the tofu for 10-15 minutes, stirring occasionally, or until it starts to become a little less soft and much of the sauce has been absorbed. The tofu will dry out some and develop a richer consistency.
  • Warm up the tortilla shells in the microwave (or a dry skillet) first to make it easier to roll them up without tearing once you add the filling.
  • Assemble the burritos by adding a generous scoop of the “cheesy” tofu scramble, a sprinkle of fresh chopped cilantro, and then top with a big scoop of the crispy vegan breakfast hash. Roll them up tightly.
  • Serve immediately for the freshest experience, or prepare them for freezing to enjoy later.
  • To freeze the burritos, wrap each individual one tightly in aluminum foil, then place them in an airtight ziploc bag in the freezer. To reheat, remove from foil and place on a microwave-safe plate. Heat until hot throughout (typically 2-3 minutes, flipping halfway). For crispier results, reheat in a preheated oven or air fryer.
