How to Make the Best Slow Cooker Vegetarian Chili Mac

Creating this delicious vegetarian chili mac is surprisingly straightforward. Follow these simple steps for a hearty meal that will become a family favorite:

  1. Sauté Aromatics: Begin by gently cooking your minced fresh garlic and diced onion in a skillet with a touch of olive oil. This crucial step softens the onions, making them translucent and sweet, and brings out the fragrant depth of the garlic. Pre-cooking prevents crunchy onion bits in your finished chili and lays a robust flavor foundation for the dish.
  2. Combine Chili Ingredients: Once the aromatics are perfectly sautéed, transfer them to your 6-quart (or larger) slow cooker. Add the kidney beans (drained), chili beans (undrained, for extra flavor and liquid), sliced stewed tomatoes (undrained), tomato paste, diced fire-roasted tomatoes, vegetable broth, and all your aromatic spices: chili powder, paprika, cumin, salt, pepper, and a touch of cayenne for a subtle kick. Stir everything thoroughly to combine.
  3. Slow Cook the Chili Base: Cover your slow cooker and let the chili work its magic. Cook on high for 2 to 2.5 hours. During this time, the ingredients will meld beautifully, the flavors will deepen, and the chili will become wonderfully hot and bubbly. This allows the tomatoes to break down and the beans to soften further, creating a rich and savory base for the macaroni.
  4. Add Macaroni Noodles: After the chili base has cooked, it’s time for the star of the show: the macaroni! Stir in the uncooked elbow macaroni noodles directly into the hot chili. Make sure they are fully submerged in the liquid to ensure even cooking.
  5. Cook the Noodles to Perfection: Continue cooking for an additional 20-40 minutes. This is the stage where careful monitoring is key. Since the chili is already hot, the noodles will cook relatively quickly. You want them to reach an “al dente” texture—tender but still firm to the bite—to avoid them becoming mushy.
  6. Finish with Cheese: Once your macaroni is perfectly cooked, stir in the shredded cheddar cheese until it’s completely melted and creamy. The cheese adds a luscious richness and binds all the flavors together.
  7. Serve & Garnish: Ladle generous portions into bowls and garnish with fresh chopped parsley and, if you’re a cheese lover (like us!), an extra sprinkle of shredded cheddar. Serve hot and enjoy!

Tips for Cooking Your Pasta in the Crockpot

Cooking pasta directly in the slow cooker is a game-changer for convenience, but it requires a little attention to detail to achieve that perfect al dente texture:

  • Monitor Closely: The most important tip is to keep a very close eye on the noodles once they are added. The hot chili will cook them much faster than you might expect. Start checking around the 15-minute mark.
  • Aim for Al Dente: You want the macaroni to be tender but still have a slight firmness. Overcooked pasta can quickly become mushy and lose its appealing texture, which is a common pitfall when cooking it in a slow cooker.
  • Adjust Cook Time: The cooking time for pasta can vary based on your slow cooker model, the brand of macaroni, and even the chili’s temperature. While 20-40 minutes is a general guideline, trust your taste buds!
  • Ensure Submersion: Make sure all the macaroni noodles are fully submerged in the chili liquid. If any noodles are exposed to air, they won’t cook properly and will end up hard. Stir thoroughly after adding them.

Once your noodles are perfectly al dente, stir in that generous amount of cheddar cheese until it’s beautifully melted and smooth. A sprinkle of fresh parsley adds a burst of color and herbaceous freshness, and then your hearty vegetarian chili mac is ready to be devoured!

This recipe consistently makes a substantial amount, ensuring there are plenty of delicious leftovers. And let’s be honest, chili mac without a generous helping of cheese is hardly chili mac at all! The creamy, melted cheddar is what truly brings this dish together, creating that irresistible comfort food texture and flavor.

For an even more intense flavor experience, consider grating your own cheddar cheese from a block instead of using pre-shredded varieties. Freshly grated cheese melts more smoothly and offers a superior, richer taste, elevating your chili mac from great to extraordinary.

A Note on Slow Cooker Size

This recipe is designed to yield a substantial portion, ideal for families or for ensuring you have delicious leftovers. For this reason, we highly recommend using a 6-quart slow cooker or larger. The volume of ingredients, especially once the macaroni is added, will easily fill a 6-quart appliance. Attempting this recipe in a smaller slow cooker may result in overflow and an unevenly cooked meal.

If you only have a smaller slow cooker (e.g., 3-4 quarts), it’s best to halve the recipe. This will ensure you have adequate room for all ingredients to cook properly and for the flavors to develop without any mess.

Can I Use Another Type of Noodle?

While elbow macaroni is the traditional choice for chili mac and performs wonderfully in this recipe, you absolutely can experiment with other pasta shapes! Small pasta varieties like ditalini, small shells, or even broken spaghetti can work well. However, keep in mind that different pasta types, especially those with varying thickness or ingredients, may have different cooking times.

I have primarily tested this recipe with standard white elbow macaroni noodles. If you opt for gluten-free or whole wheat pasta, be aware that their cooking characteristics can differ significantly. Gluten-free pasta tends to cook faster and can become mushy more easily, while whole wheat pasta might require a little extra time and liquid. Regardless of your choice, the key is to monitor the noodles frequently as they cook, stirring and tasting until they reach your desired al dente doneness. This vigilance will prevent overcooking and ensure your chili mac has the perfect texture.

One of the true beauties of this slow cooker vegetarian chili mac is its utter simplicity: there’s no need to pre-cook, rinse, or prepare the noodles in any way before adding them to the crock pot. Just pour them straight from the box into the simmering chili, and let the slow cooker do the rest! If you’re a fan of other crockpot recipes from my blog, you’ll know how much I appreciate a good slow cooker dinner where the noodles cook themselves, requiring minimal effort from me!

“Seriously this is so good and has become a staple at our house. It’s perfect for busy nights where I need a no-fuss dinner and some comfort food. Even all of my picky kids eat it with zero complaints.” – Cassandra

Serving Suggestions & Customizations

This vegetarian chili mac is a complete meal on its own, but a few simple additions can elevate it even further:

  • Toppings Galore: Beyond fresh parsley, consider sour cream or a dollop of Greek yogurt, sliced green onions, diced avocado, a splash of hot sauce for an extra kick, or a sprinkle of crushed tortilla chips for crunch.
  • Make it Heartier: For added protein and fiber, you could stir in a cup of frozen corn or diced bell peppers during the last hour of chili cooking. Even a plant-based ground “meat” substitute could be added with the other chili ingredients for a more robust texture.
  • Spice it Up (or Down): Adjust the cayenne pepper to your liking. For more heat, add an extra pinch or a dash of chili flakes. For a milder version, omit the cayenne entirely.
  • Cheese Varieties: While cheddar is classic, feel free to experiment with a blend of cheeses like Monterey Jack, Colby, or even a smoky gouda for a different flavor profile.

If you’re in need of a quick, affordable, immensely filling, and deliciously CHEESY dinner, look no further than this slow cooker vegetarian chili mac. It’s truly a hug in a bowl!

Ingredients

  • 10 cloves garlic, minced
  • 1 medium onion, diced
  • 15 oz kidney beans, drained
  • 15 oz chili beans, do not drain
  • 15 oz sliced stewed tomatoes, do not drain
  • 4 tablespoons tomato paste
  • 15 oz diced fire roasted tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons chili powder
  • 1/2 teaspoon paprika
  • 2 tablespoons cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne
  • 1 lb elbow macaroni noodles, uncooked
  • 3 1/2 cups shredded cheddar cheese
  • fresh chopped parsley, for serving

Instructions

  • Add garlic and onion to a skillet with 1 teaspoon of olive oil.
  • Saute for 10-15 minutes, or until the onion is translucent and soft, and the garlic is fragrant. This step is crucial for developing deep flavor in your chili.
  • Transfer the cooked garlic and onion to a 6-quart (or larger) slow cooker. Add the kidney beans (drained), chili beans (do not drain), stewed tomatoes (do not drain), tomato paste, fire-roasted tomatoes, vegetable broth, chili powder, paprika, cumin, salt, pepper, and cayenne. Stir all ingredients thoroughly to combine.
  • Cover and cook on high for 2 – 2.5 hours, or until the chili is hot, bubbly, and the flavors have fully melded. The onions should be completely tender by this point.
  • Once the chili base is cooked, stir in the uncooked elbow macaroni noodles. Ensure the noodles are fully submerged in the liquid. Continue to cook for an additional 15 – 40 minutes. The noodles will cook quickly, so check them often (every 5-10 minutes) until they reach an al dente texture to avoid mushy noodles.
  • When the noodles have reached your desired texture, stir in the shredded cheddar cheese until it is completely melted and evenly incorporated, creating a creamy, cheesy chili mac.
  • Serve immediately, garnished with fresh chopped parsley and additional shredded cheddar cheese, if desired. Enjoy your hearty, one-pot vegetarian chili mac!
